Saturdays at the American Royal BBQ leave’s a bunch of time to cook a ton of random stuff, try these BBQ Meatball Onion Bombs. We had the smoker running at about 275 all day.

Ground beef stuffed whole onions, wrapped in smoked bacon and smoked at 275 degrees until crispy and well done.

Ingredients

Meat

  • 1 LB Ground Beef
  • 1 Package Bacon

Vegetables

  • 2 Yellow Onions
  • 1/4 Cup Chopped Parseley
  • 1/4 Cup Chopped Mushrooms
  • 1/4 Cup Diced Onion

Sauces and Seasonings

  • 1 TBSP Spicy Ketchup
  • 1 TBSP Soy Sauce
  • 1 TBSP Worcestershire Sauce
  • 1 TBSP Brown Sugar
  • 1 TBSP Your Favorite BBQ Rub

Instructions

Prep

  1. Cut off tops and bottoms of onions and remove exterior skin.

  2. Slice onion in half and peel apart layers. Set onion shells to the side.

  3. In large bowl, add ground beef, parsley, mushroom, diced onion, ketchup, soy sauce, Worcestershire, brown sugar, rub, and breadcrumbs. 

  4. Mix by hand.  

  5. Take a small portion of the meatloaf mixture and place inside one of the onion layer pieces, then press another onion peace on top, making an onion sealed meatball. Continue with the rest of the meatloaf mixture.

  6. Wrap each bomb with 2-3 slices of bacon and secure with toothpicks.

Cook

  1. Place bombs in a tin on grates and smoke for 1 hour.  

  2. Cover with BBQ sauce and smoke for 1 more hour. (or until internal temp is 160-165 degrees)

  3. Let rest for 5 minutes. Enjoy!
