Bacon wrapped pineapple stuffed with pulled pork loin and smoked for a few hours.

Ingredients

  • 2 Pineapples
  • 2 LBS Pork Tenderloin
  • 2 LBS Bacon
  • 1 Bottle Sweet BBQ Rub
  • 1 Botle Your favorite BBQ Sauce

Instructions

Pork Tenderloin Cook

  1. Prep Smoker or oven to 275

  2. Cook and season the pork tenderloin as you normally would. 

Prep Pineapple

  1. Cut top of pineapple off.

  2. Cut off the peel along the sides, and remove the eyes of the pineapple.

  3. Use sharp knife to core out the inside of the pineapple.

  4. Stuff as much pork as possible into the center of the pineapple.

  5. Replace the top of the pineapple and hold in place with skewers. (break off so they don’t stick out)

  6. Lay out 6-7 pieces of bacon in a sheet.  

  7. Wrap pineapple in bacon securing with toothpicks.

  8. Season lightly with sweet rub.

Cook

  1. Place in a tin and smoke for about 3 hours at 275 (or until bacon crisps).
