Ground beef stuffed whole onions, wrapped in smoked bacon and smoked at 275 degrees until crispy and well done.
Cut off tops and bottoms of onions and remove exterior skin.
Slice onion in half and peel apart layers. Set onion shells to the side.
In large bowl, add ground beef, parsley, mushroom, diced onion, ketchup, soy sauce, Worcestershire, brown sugar, rub, and breadcrumbs.
Mix by hand.
Take a small portion of the meatloaf mixture and place inside one of the onion layer pieces, then press another onion peace on top, making an onion sealed meatball. Continue with the rest of the meatloaf mixture.
Wrap each bomb with 2-3 slices of bacon and secure with toothpicks.
Place bombs in a tin on grates and smoke for 1 hour.
Cover with BBQ sauce and smoke for 1 more hour. (or until internal temp is 160-165 degrees)
Let rest for 5 minutes. Enjoy!
